Trader Joe's Street Corn Tostadas with Black Beans and Avocado

Move over tacos and quesadillas, these street corn and black bean tostadas from Trader Joe’s are so yummy and filling!  They are also an affordable and healthy option at less than $5 per serving and under 400 calories.

Ingredients for the Street Corn Tostadas

Alright friends, let's ditch the fancy for a minute and get down to some real, satisfying food. Today, we're celebrating the humble tostada, and with the help of some Trader Joe's magic, we're turning it into a flavor fiesta.

What is a tostada?

Tostadas are corn tortillas that have been baked or fried until crispy.  They are topped with things like cheese, refried bean, chicken or beef.  They are basically a large open faced tortilla chip!  Come on people, who doesn’t love that!!!

Forget flimsy taco shells. We're using corn tortillas, folks. And not just any tortillas, mind you. These babies get the oven treatment, a quick spray of cooking spray to coax out that golden crisp, and a sprinkle of your favorite taco seasoning (purists, feel free to stick to salt). They'll emerge from the oven like little suns, ready to be the foundation for our culinary adventure.

How to make tostada shells

  • Preheat oven to 400°F.

  • Spray two large baking sheets lined with nonstick aluminum foil with cooking spray.

  • Lightly spray both sides of the tortilla with cooking spray and place them on a single layer on the baking sheets.  Lightly season with salt (you could also use garlic powder, onion powder, cumin or fiesta lime seasoning blend from Mrs. Dash).

  • Baked for 5 minutes, flip them over and bake for another 5-10 minutes, until the tortillas are crispy.

Toppings:

Now, the toppings. Trader Joe's comes to the rescue again with their Mexican-style roasted corn. Imagine sweet, smoky, fire-kissed corn kernels, ready to mingle with some creamy refried black beans – the jalapeño-infused kind, for a little kick. Don't be shy with these, pile them on generously.

Variations

You can turn these into a taco if you only have flour tortillas or just use the corn tortillas as is for a base.

You can add other ingredients like mushrooms, vegetarian chorizo, roasted onions and peppers.  Have fun with adding items you have in the fridge.

Vegetarian and full of flavor, these simple to make tostadas will be a family night crowd pleaser. They are simple to make, require 7 ingredients, and can be made in less than 30 minutes.

  4. Baked for 5 minutes, flip them over and bake for another 5-10 minutes, until the tortillas are crispy.
  5. While tostadas are cooking, follow directions for Trader Joe’s Mexican style roasted corn, set aside.
  6. Cook refried black beans in a medium pan over medium low heat until warmed through.
  7. To assemble the tostadas, place two shells on a plate, top each with 1/4 cup of black beans and corn. Top with shredded lettuce, salsa, slices of avocado. Lightly drizzle the green goddess dressing on the top. Repeat.
