Autumn Honeycrisp Apple Salad

I am going to have to take a brief break from JodiLoves.

I can't believe how much things have changed in the last eight months. In February (when I started the blog) my confidence was at an all time low. My business had lost it's biggest client and I was struggling personally to find my purpose. I had a vague notion of wanting to be a food photographer, but no clue how to actually 'do' it? Like with most things in my life, when I get knocked off course, I move on to a new dream quickly. I see that as one of my biggest personal strengths. Go me! So after working hard to develop my visual aesthetic and with the help of Jamie as my account coordinator and amazing proof-reader, we have developed this little food photography dream into a reality!

The reason I am taking a short break is professional. We have a few very exciting projects in the works that need my full attention. It has become harder and harder to find the time to develop recipes, write content, style and shoot for the blog. JodiLoves is not over, I will be back in mid-November with new recipes and images to share. I hope that you will check back then or sign up for the mailing list, so you don't miss the holiday recipes I have been working on.


I promise, this is not goodbye!

Autumn Apple Salad


Author: Jodi Boatman Prep Time: 10 Minutes Cook time: 90 Seconds

Total Time: 11.5 Minutes Yields: 8 Servings

Ingredients:

Lemon Dressing:

¼ C fresh squeezed lemon juice
1 TBSP lemon zest
1/3 C extra virgin olive oil
2 TSP honey
2 cloves garlic, minced
pinch of salt

Salad:

2 medium honey crisp apples, sliced thin
3 C baby spinach
3 C baby arugula
½ C dried cherries
1 small onion, sliced thin
¼ cup feta cheese crumbles
¼ roasted pistachios
1 C wild rice, cooked (I used 90 second rice)

Instructions:

  • To make the dressing, add all ingredients to a medium jar with lid and shake until emulsified. Set aside.

  • To make salad, add all ingredients to a large serving bowl, top with dressing and toss.
